Worlds Best Tomato Sauce

 ¼ cup high-quality extra virgin olive oil
 6 cloves of fresh crushed garlic
 1 chili finely chopped and seeds removed
 1 can (roughly 700 ml) of whole San Marzano Tomatoes
 ½ tsp fresh oregano
 ½ tsp fresh thyme
 Salt to taste

Pour the can of tomatoes into a bowl and crush them with your hands. (don't use a blender as it will make is less rustic and you will lose the nice pieces of tomato).

Add the oil to a pot and heat on medium. Then add the garlic, chili, and herbs and saute for about 1-2 mins (do not let it brown). Turn down to low heat. Add the hand crush (now you can really call this sauce handmade!) tomatoes to the pot and bring to a boil then reduce heat and simmer for about 20-25 mins.

Simply just toss with some fresh pasta noodles and top with Real Parmigiano Reggiano and some fresh basil

Tip:

This makes a perfect pizza sauce as well!
