 500 g Strained Balkin Style Yogurt
 1 Cucumber
 2 tbsp White Wine Vinegar
 1 tbsp Dried Dill Or 1/4 cup Fresh Chopped
 2 Cloves Of Crushed Garlic
 2 tbsp Olive Oil
 Salt & Pepper To Taste

Peel the cucumber and grate it

Put in a bowl. Add a pinch of salt and 1 tablespoon of white wine vinegar. Do this to get the cucumber to release its liquid because we don't want it in the tzatziki as it will make it watery.

Combine the yogurt, minced garlic, white wine vinegar and olive oil. Mix until combined.

Place the cucumber in a cheesecloth and with your hands to squeeze out the liquid and discard.

Add the Cucumber to the yogurt and add pepper and salt to taste.

Add the dill, mix and Serve
