Greek Lemon Roast Chicken

This is a great refreshing Meal you can make when you are tired of the same old shake and bake. The lemon the Orengo all come together in this Greek Lemon Chicken to take you to the shores of Santorini!

 ¼ cup Extra Virgin Olive Oil
 100 ml White Whine
 100 ml Water
 ¼ cup Lemon Juice
 2 Rind Of Lemon
 1 tbsp Garlic Granules
 1 tbsp Dry Oregano
 1 tsp Dry Thyme
 1 tbsp Mustard
 1 tsp Pepper
 ½ tsp Kosher Salt
 4 Chicken Legs

The Marinade

Blend the garlic, oregano, thyme, lemon rind, lemon juice, extra virgin olive oil, wine, water, mustard, salt and pepper in a food processor, until all of the ingredients are combined.

The Chicken

Score the Chicken the chicken and place in a large bowl or a ziplock bag and pour the marinade over it.

Massage it on to chicken until it is completely coated.let it marinate for 2 hrs or up to 24 hrs days. The longer you leave it, the tastier it will turn out!

When ready to cook, place chicken in the baking dish. Drizzle any remaining marinade over chicken cover with aluminum foil.

Roast for 45 minutes, remove aluminum foil and roast for another 30-45 Mins, (Every 10 minutes, basting the chicken with the marinade).

Remove and enjoy with some Potatoes or rice!
