AJ’s Easy Greek Pita

 2 tsp Active Dry Yeast
 1 tsp Organic Honey
 160 ml Milk (Room Temp)
 80 ml Water (Room Temp)
 320 g Flour
 1 tsp Salt
 1 tbsp Olive Oil

1

Combine the
honey, yeast, water & milk in a bowl. Leave until begins to bubble.

In another bowl, combine the flour, the salt, and mix

Add the oil to the yeast mixture and combine.

Make a well in the flour and pour in the yeast mixture and stir slowly pulling in the flour.

Place mixture on a lightly floured working surface. Knead for 4-5 minutes until the dough becomes smooth. and Springs back to the touch.

Spray a bowl with oil and place the dough back in the bowl.

Cover with a towel and let it rest for 45 mins or doubles in size.

Turn a cast Iron Pan on to Medium Heat

Punch down the dough to remove the air and cut into 6 equal sized portions.

Place portions of dough on a lightly oiled working surface. Using a rolling pin to roll out each portion to a circle of 6-8 inch pitas

Add olive oil to the cast iron pan & Cook the pita bread for 2 minutes on each side in the cast iron pan until they puff up slightly and have a nice coloring to them!
