Balsamic Fig Jam

 2 lbs Fig, stems removed and cut into quaters
 ¾ cup Organic Honey (local is best)
 Zest and Juice of One Lemon
 1 tbsp Balsamic Vinegar
 Pinch of salt

Add the figs, lemon zest, lemon juice, and honey into a heavy bottom sauce pot.

Bring to a boil over medium-high heat.

Simmer for 30 minutes, stirring often, until it thickens. As figs soften, use a wooden spoon to mash the figs.

Add balsamic and a pinch of salt to taste
